Kevin and Catherine opened Dunbrody County House Hotel twenty-five years ago. Back then, it was the hot ticket in town, setting new standards in accommodation and fine dining cuisine. Kevin had had spent many years abroad and was returning as a respected Master Chef. Over those 25 years, Dunbrody was all about innovation in terms of its cuisine, what with the opening of the Captains Table on the grounds of the hotel and his daily TV pep talk that inspired us to not only cook, but to cook well. While the food never lost its flavour the brief from our client was to make the fabric of the hotel the hot ticket once again. Part of that brief was to respect the old and retain the charm and personality of the house.

Renovating public areas of the hotel

Our role was to rejuvenate the public areas, bedrooms and bathrooms to bring an understated county house opulence to the entire hotel, engaging with the external west facing evening terraces. This project, from start to finish, was a nine-month process, with an expenditure in excess of €1.5mill and a construction phase of only 10 weeks during which time the hotel was out of action. This was a really successful collaborative experience between Emer Burke, project manager with Burke Builders, Catherine & Kevin Dundon, the incredible list of suppliers – who turned up on time notwithstanding the tight timelines along with the rude interruption of Covid – and, of course, ourselves, Douglas Wallace Consultants.
