The South Court Hotel, Limerick
The South Court Hotel was developed in the early 2000’s and as part of its F&B offer had installed a ‘celtic’ themed bar called ‘Boru’s’. Over the last few years this concept had become very dated and tired and lacked the sufficient offer and spectacle to not only service existing clientele but attract new customers to the venue.
Our client set out to develop a new Gastropub concept based on the idea of offering good sustainably sourced artisan food within a comfortable adaptable and exciting environment.
DWC’s brief was to take the existing envelope and revert with a new concept to totally transform the space from the dull and dated bar it was to a brand new warm and wonderful eaterie! Taking inspiration from New York steakhouses and imbuing it with a sense of colour texture and wit, the new ‘Off the Bone’ gastropub has met all client and public expectations and provides full visual stimulus the minute you enter and attracts the eye whilst being tempted by the menu. The new space, its materials and finishes perfectly complement the new sophisticated food & beverage offer and succeed in not only creating a new bar environment but also creating a space that enjoys a function from morning right through to the bustling night-time.
